peek at my week. no 3.


this weekend had amazing weather. i went camping with a group of friends and had a grand time. i also had a long weekend so monday was spent doing a few odds and ends around the house. the temp got up to 89 so i had to get out and spend some time in the yard as well. i tossed some wildflower seeds into the yard, read on the hammock, spent some time with my sweet kitty face and checked on the progress of my pickles and my growing veggies and herbs. it is almost time to plant the tomatoes into some bigger pots and start taking outside during the days!
i also stomped all over matt in a game of scrabble at the end of last week. (suck it wolkoff.)

hadley moutain.

in 4 short weeks matt and i will be climbing giant mountain and rocky peak ridge. so, in preparation we took advantage of the gorgeous weather yesterday and hiked up hadley mountain. it is a small mountain in the southern adirondacks recorded at 2,653 ft elevation. there is a fire tower at the top of the mountain that was built due to many fires in the area in the early 1900's.  the tower was originally wood but rebuilt in steel in the 20's. it is still opened and used seasonally along with a cabin near the top used by the summit steward. the cabin windows and doors were boarded when we went to check it out but found a fire ring and beautiful view of the surrounding mountains from the small front porch.



the hike was amazing. there were many trees uprooted along the trail as well as many boulders exposed. both of which have been caused by the fires i mentioned earlier. we noticed a few small flowers and of course heard and spotted a few sweet chipmunks on the hike. 



it was very windy and chilly at the top though matt and i managed to find a nice big rock near some trees to lounge on and soak up some sun before heading back down the trail.

yum!

i love foodgawker.

love. love. love.

i have been in a serious food rut lately. i was getting tired of all of my normal favorite dinners and needed to spice things up. i will admit that i also am SUPER lazy when it comes to making dinner after working all day, so it needs to be something quick, and easy and also healthy.

if you have not heard of food gawker, here is the deal..... the site posts pictures and links to amazing blogs with super tasty treats/meals and food ideas. i have to sort (at the bottom of the screen) for "no desserts" so i don't get sucked into buttery flaky, not good for you, goodness and can stay on track in finding new and interesting menu ideas. the site is always updating so i just take a browse every few days (or daily lately) and keep a document of recipes i want to try.

(both of these make wonderful leftovers.... i had the quinoa taco mix for lunch on wheat thins and have a sweet potato for lunch that i haven't been able to stop thinking about!)
